Acorn Squash Lentil Stew

What You'll Need
Ingredients
  • 1/2 Onion Diced
  • 3-4 stalks celery
  • 1 carrot diced
  • 1 crookneck squash chopped
  • 1 Acorn Squash Chopped
  • 2-3 ounces bacon chopped
  • 1 cup Green Lentils
  • 2 cups Chicken Stock
  • 2 cloves garlic
  • 1 teaspoon thyme
  • 1 teaspoon sage
Directions
  1. Fry the bacon until some of the fat has rendered.
  2. Add your celery and onion and let cook on medium low until the onions start to go translucent.
  3. Add the rest of your veggies, lentils and spices to the pan. Cover with chicken stock and cook for 20-30 minutes or until the lentils are soft. Add Salt and Pepper to taste.
