I concocted this cocktail on a sailing trip in the Andaman sea in Thailand. After stopping at Rang Yai island and visiting a pearl farm, we paddled back to our boat at sunset and I came up with this tasty drink to celebrate. —Kim at Something New For Dinner

Ingredients
  • Ice
  • 1/2 cup Pineapple juice
  • 2 ounces White rum
  • 3/4 ounce Coconut milk
  • 1 Squeeze lime
  • 1 sprig Mint
Directions
  1. Fill a highball glass with ice. Add pineapple juice, rum and coconut milk and stir. Garnish with a squeeze of lime and a sprig of mint.
