Green Pea Lemon Hummus

A healthy version of hummus without the tahini but with a splash of lemon, a perfect Spring dip. —claire

What You'll Need
Ingredients
  • 11 ounces bag of frozen sweet peas boiled for two minutes
  • 1/4 cup grated parmesan
  • 3 tablespoons lemon juice*
  • 1 tablespoon olive oil
  • 1 teaspoon minced garlic
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
Directions
  1. Boil peas on stove for two minutes
  2. Reserve 1/2 cup of water and drain peas.
  3. Put lemon juice, parmesan, olive oil and seasoning in bottom of food processor.
  4. Add peas and 2 tablespoons of water and puree. Continue to add water, one tablespoon at a time, until peas are smooth.
  5. Season with salt and pepper to taste. Fridge 4 hours before serving. Best served with grilled flatbread or pita.
  6. *More or less lemon juice may be used depending on your taste.
