Author Notes: Delicious and healthy, packed with "Greens"
Goes great with a light green salad

Serves: 4

  • 4 ounces smoked salmon, torn or chopped into bite sized chunks
  • 6 asparagus spears, washed, chopped into about 1 inch pieces
  • 1 leek, white part chopped and rinsed
  • 6 eggs
  • 1 tablespoon milk (or almond milk)
  • 1 prepared pie crust (not baked)
  • fresh cracked pepper
  1. Lightly whip eggs and splash of milk in a bowl
  2. Add some cracked pepper to eggs
  3. Evenly place the asparagus pieces and leeks in the pie crust
  4. Pour egg mixture into pie crust over asparagus and leeks
  5. Evenly drop in smoked salmon chunks
  6. Finish with a few more cracks of pepper
  7. Bake at 375 for 20 minutes, you may have to alter time depending on the crust you use
