kale queen salad

I usually make it at work topped with goat cheese,but I like better without it.

What You'll Need
  • kale, spinach, cucumber, pear, red onion, mint, parsley
  • 1 bunch kale
  • 1 bunch spinach
  • 1 cucumber
  • 2 pears
  • 1 small red onion
  • 4 sprigs mint
  • 4 sprigs Italian parsley
  • soy sauce, honey, rice vinegar, ginger, roasted penuts.
  • 2 ounces soy sauce
  • 2 ounces honey
  • 1 rice vinagar
  • 1 teaspoon ginger jus
  • 3/4 pound roasted pinuts
  1. roast wedges of pears and set aside. In a small bowl mix the bottom ingredients except the pinuts .
  2. In a large bowl mix roughly chopped kale no stem, the spinach, sliced cucumber, sliced red onion, parsley leaves, and coarsely chopped mint leaves
  3. At this point dress the salad with the dressing, divide in 6 dishes and topped with the roasted pinuts and the roasted pears.
