I usually make it at work topped with goat cheese,but I like better without it.

Ingredients
- kale, spinach, cucumber, pear, red onion, mint, parsley

Italian parsley
- soy sauce, honey, rice vinegar, ginger, roasted penuts.

ginger jus

3/4 pound
roasted pinuts
Directions

roast wedges of pears and set aside. In a small bowl mix the bottom ingredients except the pinuts .

In a large bowl mix roughly chopped kale no stem, the spinach, sliced cucumber, sliced red onion, parsley leaves, and coarsely chopped mint leaves

At this point dress the salad with the dressing, divide in 6 dishes and topped with the roasted pinuts and the roasted pears.
