kale, spinach, cucumber, pear, red onion, mint, parsley
- 1 bunch kale
- 1 bunch spinach
- 1 cucumber
- 2 pears
- 1 small red onion
- 4 sprigs mint
- 4 sprigs Italian parsley
soy sauce, honey, rice vinegar, ginger, roasted penuts.
- 2 ounces soy sauce
- 2 ounces honey
- 1 rice vinagar
- 1 teaspoon ginger jus
- 3/4 pound roasted pinuts
- roast wedges of pears and set aside. In a small bowl mix the bottom ingredients except the pinuts .
- In a large bowl mix roughly chopped kale no stem, the spinach, sliced cucumber, sliced red onion, parsley leaves, and coarsely chopped mint leaves
- At this point dress the salad with the dressing, divide in 6 dishes and topped with the roasted pinuts and the roasted pears.
