Carrot Slaw with Toasted CuminĀ Seeds

Bright, crunchy slaw perfect for taco night, adding to greens salad, and serving alongside almost anything. Cheese is optional, slaw stores well if cheese is added separately. —Early Morning Farm

What You'll Need
  • 4 cups grated carrrots
  • 1 tablespoon olive oil
  • 2 tablespoons apple cider vinegar
  • salt to taste
  • 1/4 cup optional crumbled goat or feta
  1. Toast cumin seeds. Place the cumin seeds in a small skillet and heat over medium heat until fragrant. Remove from skillet and let cool.
  2. Place carrots in a large bowl. Toss carrots with apple cider vinegar or lime juice, cumin, and salt to taste. Top with cheese before serving if desired.
