Author Notes: Bright, crunchy slaw perfect for taco night, adding to greens salad, and serving alongside almost anything. Cheese is optional, slaw stores well if cheese is added separately. —Early Morning Farm
- 4 cups grated carrrots
- 1 tablespoon olive oil
- 2 tablespoons apple cider vinegar
- salt to taste
- 1/4 cup optional crumbled goat or feta
- Toast cumin seeds. Place the cumin seeds in a small skillet and heat over medium heat until fragrant. Remove from skillet and let cool.
- Place carrots in a large bowl. Toss carrots with apple cider vinegar or lime juice, cumin, and salt to taste. Top with cheese before serving if desired.
