Ingredients
  • Salad Ingredients
  • 3 cups cooked barley
  • 3 large tomatoes, red or yellow, diced
  • 1 bunch cilantro, chopped
  • 1/3 cup raisins
  • 1/4 cup pistachios
  • 1/4 cup diced kalamata olives
  • 1/2 preserved lemon, diced (or 1/4 cup caper berries)
  • 1 bunch chilled blanched asparagus, cut into 2 inch pieces
  • 2 cups garbanzo beans, drained
  • Vinaigrette Ingredients
  • 1/3 cup cold-pressed extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 2 cloves garlic, pressed or minced
  • 1/4 cup za'atar spice
Directions
  1. Whisk vinaigrette ingredients until emulsified.
  2. Combine salad ingredients in large bowl.
  3. Pour vinaigrette over salad, and stir until combined. Add salt and pepper to taste.

The combination of all these ingredients made for a delicious and satisfying light meal. I substituted almonds for the pistachios and used coriander in lieu of za'tar...simply because it is what I had on hand.
