What You'll Need
  • 2 tablespoons freshly squeezed lemon juice
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/3 cup loosely packed fresh parsley leaves, finely minced
  • 1/3 cup loosely packed fresh cilantro leaves, finely minced
  • 3 cups shredded green cabbage
  • 2 carrots, peeled and shredded
  • 2 green onions, thinly sliced
  • 1/4 cup dried cranberries
  1. Add the olive oil to the lemon juice in a slow and steady stream, whisking continuously. Stir in the salt, parsley, and cilantro.
  2. Combine the cabbage, carrots, green onions, and dried cranberries in a large bowl, and toss with the dressing. Season to taste with salt, pepper, and more lemon juice, if desired.
