Author Notes: Wonderful italian goat cheese named "Robiola di Roccaverano" is perfect with sweet taste of beetroot and strong flavour of arugulavaleria

Serves: 1


  • 150 grams goat cheese
  • 5 edible flowers
  • 250 grams arugula
  • handfuls cress

Balsamic Vinaigrette

  • 3 tablespoons olive oil
  • salt
  • 2 teaspoons balsamic vinegar
  1. Simply compote the salad with all ingredients, sliced beetroot and diced goat cheese.
  2. Mix olive oil, salt and balsamic vinegar and season the salad. Garnish with the delicate flowers.
