Author Notes: This Waldorf salad recipe is slightly adapted from the 1939 cookbook Home at the Range. It feels thoroughly modern with bits of bitter greens and a dusting of paprika.
Serves: 4 as an appetizer
cup diced apples
cup diced celery
cup chopped walnuts
leaves escarole or chicory, chopped and stems removed
Smoked paprika, for garnish
- In a medium bowl, mix apples, celery, walnuts, and mayonnaise. Arrange chopped lettuce on four plates and top with apple mixture. Sprinkle paprika on salad to finish.
