Hummus and Sweet Potato Sandwich

What You'll Need
Ingredients
  • Necessary ingredients:
  • 2/3 sweet potato
  • 1 teaspoon olive oil
  • 1 teaspoon salt
  • 2 slices whole-grain bread
  • 2 tablespoons hummus
  • 1 handful kale
  • 1 ounce feta cheese
  • Optional ingredients:
  • 1/4 avocado
  • 1 handful sprouts
  • 1/2 cup sliced tomatoes
  • 1/2 cup sliced onions
Directions
  1. Preheat the oven to 375° F. Slice the sweet potatoes into 1/4-inch-thick circles and toss them in olive oil and salt, and roast for 20 minutes.
  2. While the sweet potatoes roast, toast the bread. Once toasted, spread the hummus evenly across one side of each slice.
  3. Top one slice of the bread with kale, feta cheese, and sweet potatoes. Add the remaining optional ingredients if desired. Place the other piece of bread on top and enjoy!
