Author Notes: Baked pasta was inspired by Mlinci (Baked noodles, traditional Croatian side dish).anka


Serves 4

  • 12 ounces (350 g )fresh fettuccine
  • 3.5 ounces ( 100 g) pancetta or smoked cured bacon, thinly sliced
  • 4 small shallots, thinly sliced
  • 1 teaspoon chili flakes (optional but recommended)
  • 1/3 cup (handful) fresh chives, chopped
  • 3 tablespoons oil
  • sea salt
  • freshly ground black pepper
  1. Bake fresh noodles in the oven for 10 minutes at 400 F, turn over and bake 5 minutes longer, depends how dark you wont, darker the color, nuttier flavor.
  2. Bring pot with salted water to boil, put baked pasta in and turn heat off, make sure to cover all pasta with water. Let sit for 10 minutes.
  3. In meantime slice pancetta and shallots.
  4. Heat 3 tbsp oil, add chili flakes, pancetta and shallots, sate 4-5 minutes.
  5. Drain pasta and save some liquid, add pasta to pancetta and shallots, if it is to dry add some liquid.
  6. Season with salt and freshly ground black pepper.
  7. Add fresh chives.
  8. Let sit for 5 minutes before serving to allow the flavor to develop.
