Healthy salad recipe from the Post Ranch Inn, made with super food radicchio, frisee, butter lettuce, and arugula. —elanaspantry

Ingredients
  • 1 small head radicchio
  • 1 small head frisee
  • 1 small head butter lettuce
  • 2 ounces arugula
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dijon mustard
  • 1/4 teaspoon celtic sea salt
  • 1/4 teaspoon ground black pepper
Directions
  1. Tear the head lettuces (radicchio, frisee, and butter lettuce) into bite size pieces
  2. In a large bowl, combine head lettuces with arugula
  3. In a mason jar, shake olive oil, vinegar, mustard, salt, and pepper until combined
  4. Toss salad with half of dressing, or more to taste
  5. Serve
