Author Notes: Serve these with fresh homemade hummus for a virtually fat-free appetizer. To give it a southwest twist, substitute chile powder for Greek seasoning and serve with fresh salsa. Serves 30

  • 6 (6-inch) pita breads
  • vegetable cooking spray
  • 1 teaspoon salt-free Greek seasoning
