Cream of Zucchini Soup

A delicious cream soup made from zucchini. Sometime last year I was given 2 huge zucchinis as a gift, they weighed 4kg each, and zucchini became the main dish for the next two weeks! :D —sisterpowerfood

What You'll Need
Ingredients
  • 100 grams butter for frying
  • 1 onion
  • 3 garlic cloves
  • 500 grams zucchini (one normal size!)
  • pinch salt
  • pinch black pepper
  • 1.5 liters water
  • 2 stock cubes
Directions
  1. Peel your zucchini, onion and garlic and chop them (remember, smaller pieces faster cooking).
  2. Sizzle onion and garlic on the butter in a big pot until golden.
  3. Add zucchini and let it cook for about 30 minutes until soft.
  4. Pour water, add cubes and bring to the boil.
  5. Blend until creamy.
  6. Season with salt and pepper
  7. Serve with croutons and sour cream.
