Watermelon Red Pepper Gaspacho

Serves: 4


  • 1/4 Slice of Watermelon
  • 4 - 6 Ripe Red Tomatoes (Cherry or Plum)
  • 1/2 Red Pepper (Grilled or Fresh)
  • 1 Scallion
  • 1 Bunch of Basil
In This Recipe


  1. Puree the above ingredients and chill for at least an hour.
  2. Serve into bowls with balsamic vinegar, extra virgin olive oil and cracked salt & pepper and favored Hot Sauce on the side for everyone to add to their taste.
  3. Variations: Feel free to add and/or substitute fresh mint, chives, cucumbers, green peppers or hot chili peppers to suit your and your guests tastes.
