Pumpkin Chip Oat cookies

I came up with this recipe on a whim after finding pumpkin spice morsels in the grocery store one fall day. So my twin boys, and I decided to play around in the kitchen. They became an instant hit with family and friends. —JenniferChristman

Ingredients
  • Wet ingredients
  • 1 cup real butter
  • 2 teaspoons vanilla
  • 2 eggs
  • 15 ounces canned pumpkin puree
  • 2 cups light brown sugar
  • 2 cups sugar
  • Dry ingredients
  • 1 bag pumpkin spice morsels
  • 1 cup english walnuts havles
  • 4 cups unbleached flour
  • 2 teaspoons baking soda
  • 1 teaspoon creme of tartar
  • 2 teaspoons cinnamon
  • 1 teaspoon salt
  • 2-2/3 cups Old fasion Oats
Directions
  1. Preheat oven to 350°. Mix all of the wet ingredients together in a mixing bowl. Mix all of the dry ingredients together in another mixing bowl. Slowly add the dry ingredients to the wet ingredients and mix together.
  2. grease a cookie sheet and use a tablespoon to make golf ball sized cookies on the trays spaced evenly about 9 cookies per tray. Bake for 14 to 15 minutes.
