French Yogurt Cake

This cake is similar to a pound cake, but not quite as dense. It is much simpler to make, though: you mix everything in one bowl, and instead of measuring cups, you use the yogurt contain to measure the other ingredients. Ingredients
  • 1.5 teaspoons baking powder
  • 1 4-oz. container vanilla yogurt, at room temperature for an hour (Dannon Activia and Stonyfield YoBaby are this size)
  • 1/2 container vegetable oil
  • 2 containers sugar
  • 3 containers all-purpose flour
  • 2 eggs, at room temperature for an hour
  • 1 orange, zested
Directions
  1. Preheat the oven to 350º. Lightly butter a 8.5 x 4.5″ loaf pan, line it with parchment paper so it overhangs the long sides by about 1/2″, and lightly butter the paper.
  2. In a large bowl, whisk together the baking powder and yogurt. Add all of the other ingredients in the order listed, whisking to incorporate after each one. (You will have to rinse and dry the yogurt container in between measuring the oil and the sugar.)
  3. Scrape the batter into your prepared pan and bake until done, about 50 minutes.
  4. Cool for 5 minutes, then run a knife around the ends and remove the cake from the pan by grabbing and lifting the parchment paper. Let cool completely before slicing.

I dump all the dry in a bowl with the sugar on top. If I am using lemon or orange zest, I'll rub the zest into the sugar. Then I dump all the wet on top. Then I will mix everything together. Then bake. Perfect!

I add them between the flour and the zest, but as Dlinds52 pointed out, it’s a very forgiving cake. 😊

Still making it!! Best ever. 2 are in the over right now. The add ins are blueberry, lemon zest, almond flavoring, and ricotta cheese instead of yogurt with a splash of milk because ricotta is thicker than yogurt. I add a little milk or water or juice when I use Greek yogurt too. The best recipe!!!!

Best pound cake ever. I make it every other week. Sometimes I make it with lemon, orange, or almond with mini chocolate chips. Sometimes I use ricotta or fruit. I also size it up for 6 oz yougurt cups. I also love to pile the top with demarra sugar to get a crunchy top. Freezes great too!!!

So happy to hear! Those add-ins sound delicious. Sometimes I add a tablespoon or two of rum for some extra flavor. :-)
