Dad's Turkey Jerky

A great way to utilize Thanksgiviing leftovers! —Clean Eatin' Chick

Ingredients
  • 1/2 cup soy sauce
  • 2 teaspoons fresh grated ginger
  • 1 tablespoon liquid smoke
  • 4 tablespoons brown sugar
  • 1 clove garlic, minced
  • 2 pounds cooked turkey, sliced paper thin
Directions
  1. Thinly slice leftover turkey. Mix soy sauce, brown sugar, ginger. garlic and liquid smoke in a bowl
  2. Dip turkey slices into marinade
  3. Place dipped meat in layers on a baking sheet and pour remaining marinade over turkey slices
  4. Cover tightly and let marinate in refrigerator for 6 to 12 hours
  5. Rotate layers of meat occasionally
  6. Dehydrate in a dehydrator, like an Excalibur brand, at 125 degrees F for 6 hours or until dry
  7. While meat is drying, blot excess oil with a paper towel
