- 2-3 zucchini
- 2 15 oz cans black beans
- 2 28 oz fire roasted diced tomatoes
- 3/4 cup tomato paste
- 1 medium onion
- Salt & Pepper to taste
- 1 tablespoon oregano
- 1/2 teaspoon nutmeg
- 1 teaspoon garlic
- Chop zucchini into 1 inch pieces
- Finley slice onion
- Add all ingredients to slow cooker
- Cook on low 6-8 hours or high 3-4 hours
