A warm, baked Healthy Almond Walnut Apple Crisp bursting with almond & cinnamon. This gluten-free, Paleo, low sugar messy goodness is the perfect healthy desert to add to your holiday menu! —Megan Olson

Ingredients
  • 5 medium red apples (softer is better, I used Gala)
  • 1/2 cup coconut oil
  • 1 tablespoon almond extract or vanilla extract
  • 1/4 cup honey
  • 1/2 teaspoon nutmeg
  • 1/2 tablespoon cinnamon
  • 1 1/2 cups almond flour (oat flour would work well too)
  • 1/4 cup chopped walnuts for topping
Directions
  1. Preheat oven 350 degrees
  2. Prep 8x8 baking dish with cooking spray
  3. Peel apples, remove core & slice into thin pieces
  4. Place apples on baking dish evenly
  5. In a bowl, combine all ingredients leaving walnuts to the side
  6. Spread mixture on top of apples evenly
  7. Sprinkle walnuts on top
  8. Bake 30 minutes @ 350 degrees

I'm just not comfortable cooking with that much coconut oil. WAY too much saturated fat for "healthy." The verdict is in: Coconut oil was a bad idea and the fad is finally over.

Also, 1 1/2 cups of almond flour has 80 g of additional fat and 50% more calories than wheat or oat flour... This recipe is not a great idea.
