Chocolate Almond Chia Hemp Flax Bars

A sweet & salty almond oat bar made with dates, packed with flax, hemp & chia seeds with a touch of chocolate. These Chocolate Almond Chia Hemp Flax Bars make the perfect anytime snack! —Megan Olson

What You'll Need
Ingredients
  • 1 cup GF rolled oats
  • 1 cup raw almonds
  • 15-18 medjool dates
  • 2 tablespoons golden flax meal
  • 1 tablespoon hemp seed hearts
  • 2 tablespoons chia seeds
  • 1/2 cup unsweetened shredded coconut flakes
  • 1/2 teaspoon sea salt
  • 1/4 cup coconut oil
  • 1/2 teaspoon almond extract
  • 2 tablespoons mini chocolate chips
Directions
  1. In a food processor layer dates, almond & oats then blend them roughly, pulsing the blender a few times
  2. Then add coconut oil, salt, almond extract, flax, hemp, chia & coconut
  3. Blend until a sticky mixture forms
  4. If a sticky mixture doesn't form, add more dates until it does
  5. Remove mixture from blender into a mixing bowl
  6. Add chocolate chips & mix by hand by hand
  7. Prepare an 8"x8" square baking dish with parchment paper leaving it hang over the sides of the baking dish
  8. Add batter to baking dish, pressing firmly into the pan to flatten out into the shape of the pan
  9. Refrigerate overnight
  10. In the morning, remove from the baking dish by lifting the sides of the parchment paper
  11. Cut into bars with a pizza cutter
  12. Keep in the fridge in a storage container up to a week, keep in a storage bag in the freezer up to a month
