Makes: 20-25 pieces

  • 3 pounds fresh jalapenos
  • 8 ounces cream cheese
  • 1/2 cup shredded parmesan cheese
  • 1/2 cup shredded cheddar cheese
  • 1 pound hickory smoked bacon
  • 1/2 cup finely chopped yellow onion
  • 2 tablespoons butter
  • 1/4 cup lime juice
  • 1/4 cup honey
  1. Preheat oven to 400 degrees
  2. Cut jalapenos in half and remove seeds
  3. Sautee chopped onion in pan with butter over low heat until translucent
  4. In a separate bowl, mix cream cheese, cheddar, and parmesan
  5. Mix in sautéed onions to cheese mixture
  6. Spoon mixture into each jalapeno until mixture runs out
  7. Wrap jalapeno with half a slice of bacon
  8. Place on cookie sheet
  9. Bake for 20 to 25 minutes or until bacon is golden brown
  10. Mix lime juice and honey together
  11. Brush lime and honey mixture over jalapenos before serving
