Chocolate Chickpea Brownies

Ingredients
  • 1 can chickpeas rinsed & drained very well
  • 1/2 cup almond butter (any nut butter can be used)
  • 1/3 cup maple syrup
  • 2 teaspoons almond extract
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/3 cup mini chocolate chips
Directions
  1. Preheat oven 350F degrees
  2. Prepare a 8x8 baking pan by spraying it with nonstick cocking spray
  3. Add all ingredients except chocolate chips to a blender or food processor
  4. Process to combine until smooth
  5. Add chocolate chips and fold into the batter by hand
  6. Bake 20-25 minutes
  7. Cool in the pan 20 minutes before eating or cutting
  8. Using a plastic knife, cut brownies into 16 squares & enjoy!

Yes, I am aware of that, but I truly appreciate you pointing it out. There was a specific reason why I did not call them blondies. What makes these extra creamy is using real chickpeas. I am GF and will not touch chickpea flour. It makes everything taste really bean-y. Real chickpeas in baked goods do not taste that way.

In my experience, yellow brownies are called "Blondies!" Brownies are brown with cocoa or chocolate. But they look like a good idea. I make chocolate brownies with chick pea flour these days for my gluten-free friends.
