Pumpkin Almond Joy Bites

A no bake snack bite made with almond butter and oats blended with winter spices. A healthy snack solution that will save you time and money! —Megan Olson

  • Makes 6
Ingredients
  • 8 tablespoons GF rolled oats
  • 8 tablespoons almond flour
  • 4 tablespoons almond butter
  • 4 tablespoons pumpkin puree
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon almond extract
  • 1 packet truvia sweetener

Directions
  1. Pulse all ingredients in a food processor to combine
  2. Be careful not to over combine, they just need to be loosely combined
  3. Roll the batter into balls & place in the refrigerator to harden
