Raisin, Apricot & Chocolate Covered Blueberries Cookies

Ingredients
  • 100 grams Butter
  • 150 grams Caster Sugar
  • 2 Eggs
  • 1 teaspoon Baking Powder
  • 200 grams All Purpose Flour
  • 1 handful Dried Apricots, Chopped
  • 1 handful Raisins
  • 1 handful Chocolate Covered Bluberries, Chopped
Directions
  1. Preheat oven to 180 C / 356 F.
  2. Cream butter and sugar until light and fluffy.
  3. Add eggs and beat until well incoporated.
  4. Sift flour, cinnamon, salt and baking powder. Add and mix until well incorporated.
  5. Add apricots, raisins and chocolate covered blueberries (if you dont have any you can replace with chocoalte).
  6. Line two sheet pans with parchment paper and spoon mix into trays.
  7. Bake for 18 to 20 minutes, or until edges are just golden.
  8. Let cool before serving.
