I love this recipe because it is fairly simple (as vegan cuisine always is) but really tasty! No eggs, no diary, no white sugar…. one of our best friends asked us if we were planning to serve them paper for dinner. Well, guess what, it is soft, and somewhat decadent, and he is crazy about it.
Another friend of mine is currently strictly vegetarian and doesn't eat any type of sugar unless it comes, guess what, from dried fruits. I choose dates because they incorporate very well in the dough and the result is really smooth. —abroad.kitchen
Ingredients
- Ingredients fro the dough

200 grams
Spelt (or White) flour

1 1/2 teaspoons
Cream of tartar

1/2 teaspoon
Powdered Vanilla beans

1 pinch
salt

40 grams
Vegetable oil (Sunflower or Corn are the best choices)

5 pieces
Dates
-
1/2
Lemon zest
-
1/2 cup
Water
- Ingredients for the filling

Medium apples

1 cup
sultanas

Plain vegan cookies, crushed

Lemon zest
-
1/2 teaspoon
Powdered Vanilla beans

1 pinch
salt
-
1/2 teaspoon
Cinnamon powder
Directions

Mix the dry ingredients in a bowl, and incorporate the oil. It works very well if you rub the mix between your hands until the oil is evenly distributed.

Add the dates, chopped and the water and knead gently until you have an evenly coloured and soft dough.

Wrap it in aluminium foil, and let it rest for 30 minutes in a warm place.

In the meantime, dice the apples in small pieces

Mix the apple with all the other filling ingredient and let it marinate while you wait for the the dough to be ready.

Roll out the dough, and use it to wrap the filling, pressing the edges together with the help of little more water.

Cook for 30/35 minutes at 180° until golden brown.

Serve warm or cold, to taste. Ideal with some nice coconut whipped cream
