Sweet and Crunchy Brussel Sprout Slaw

What You'll Need
Ingredients
  • 1 pound brussel sprouts
  • 2 tablespoons olive oil
  • 1/3 cup dried cranberries
  • 1/3 cup chopped walnuts
  • 1 cup balsamic vinegar
Directions
  1. Shave brussel sprouts and drizzle with olive oil
  2. Place sprouts in a large pot on medium low heat, stirring constantly for about 5 minutes.
  3. Toast walnuts in 400 degree oven for about 3-5 minutes.
  4. In a large bowl combine brussel sprouts, cranberries, walnuts and salt and pepper to taste, chill in fridge.
  5. In a small sauce pan add vinegar and heat to medium high until boiling and turn down to medium low.
  6. Reduce vinegar for 10-15 minutes, watching constantly as to not over reduce.
  7. Vinegar should be thick enough to coat the back of a spoon.
  8. Toss all ingredients together and serve.
  9. Goes great with pork!
