With some clients, we had gone for a porto tasting at The Château Frontenac's famous Champlain restaurant. It's host, Mr. Perreira, a legend in Quebec, was the one leading the tasting. This was his last drink... I was so impressed to attend such an event, and was even more so when we learned he had passed away a few weeks after. Cheers! —sisabelle

White porto

Ice

Mineral water

2-3 splashes
Lime juice
Directions

Put some ice in a short glass

Add 2-3 ounces of white porto

Top with mineral water

Complete with a splash or two (or three!) of lime
