Author Notes: A "kitchen sink" sort of recipe. It's strawberry season. I don't like the texture of cucmbers, but I do love the flavor. This solves that problem. —jennorwood
- 8-10 Strawberries
- 1/2 cup chopped, unpeeled cucumber
- 1/2 cup crushed ice
- 1/2 cup cold water or lime juice
- 1 teaspoon honey
- 3 sprigs mint (optional)
- Combine all ingredients and use a hand blender to blend into a smoothie. Great for weekday breakfast with toast!
