Strawberry Cucumber Breakfast Smoothie

Author Notes:

A "kitchen sink" sort of recipe. It's strawberry season. I don't like the texture of cucmbers, but I do love the flavor. This solves that problem.


Serves: 1



  • 8-10 Strawberries
  • 1/2 cup chopped, unpeeled cucumber
  • 1/2 cup crushed ice
  • 1/2 cup cold water or lime juice
  • 1 teaspoon honey
  • 3 sprigs mint (optional)


In This Recipe


  1. Combine all ingredients and use a hand blender to blend into a smoothie. Great for weekday breakfast with toast!

Why wouldn't you peel the cucumber? Is there some nutritional value to it?
