Strawberry Gazpacho

This is super easy, fresh and delicious. Perfect for a warm spring or summer night when strawberries are nice and sweet!!! My kids loved it! —Virginie Degryse

  • Serves 5
  • 1 cup tomato juice
  • 1 1/2 cups strawberries
  • 2 shallots, minced
  • 1 english cucumber, seeded removed and chopped
  • 1 red pepper, chopped
  • salt and pepper
  • 2 tablespoons olive oil
  • Toppings: feta, chopped jalapeno, mint, chopped strawberries
In This Recipe
  1. Put everything in the blender, until nice and smooth. Refrigerate for 1 hour, serve and add any toppings you want. I added feta, mint and jalapeño and the mix of flavors was just divine. ( goat cheese would be nice as well)
  2. Et Voila, Bon Appetit!
