Author Notes: This is super easy, fresh and delicious. Perfect for a warm spring or summer night when strawberries are nice and sweet!!! My kids loved it! —Virginie Degryse
- 1 cup tomato juice
- 1 1/2 cups strawberries
- 2 shallots, minced
- 1 english cucumber, seeded removed and chopped
- 1 red pepper, chopped
- salt and pepper
- 2 tablespoons olive oil
- Toppings: feta, chopped jalapeno, mint, chopped strawberries
- Put everything in the blender, until nice and smooth. Refrigerate for 1 hour, serve and add any toppings you want. I added feta, mint and jalapeño and the mix of flavors was just divine. ( goat cheese would be nice as well)
