This is the quickest & easiest spinach soufflé you´ll ever eat and the only want you´ll want to make. Spinach soufflé for dinner for one! —Luz Landa

Ingredients
  • 2 eggs
  • 2 cups frozen spinach
  • 3/4 cup grated cheese of choice (I used gouda)
  • 3 tablespoons all purpose flour
  • 1 teaspoon salt & pepper
  • 1 splash milk
  • 1 tablespoon olive oil
Directions
  1. Preheat your oven to 375F
  2. Thaw your frozen spinach in the microwave or in a bath of warm water.
  3. Separate whites from yolks. Save whites and add your yolks to thawed spinach.
  4. Add salt, cheese, flour, and milk, mix well until combined.
  5. Beat your white to soft peaks.
  6. Add 1/3 of your whites into the spinach mix, beat until well combined.
  7. Add the rest of the whites mixing carefully, don´t overmix, you want the air from the whites to stay airy!
  8. Dollop a good tablespoon of olive oil into a ramekin and coat well. Add the souffle mixture into the ramekin.
  9. Bake until soufflé is puffed and golden on top. The center should look set but the center moves slightly when dish is shaken gently. Takes about 25 minutes (do not open oven door during first 20 minutes). Serve immediately.

Wonderful! I used fresh baby spinach because I had a bag about to go bad. I cooked it down until wilted, and ended up with less than two cups but I went with it anyway. I baked it in the smallest casserole dish I have. I took it out after 23 minutes and I may hav over cooked it, but it was delicious! Will definitely make this again with the right amount of spinach!
