Cauliflower Hash with Fried Eggs

Author Notes: This is my go to dinner after a long day. I always have cauliflower , bacon and eggs in my fridge. During the weekend I roast a couple of cauliflower heads cut into florets. I use them all week long. —laura bryant

slices of bacon

cups roasted or steamed cauliflower

tablespoons chopped onions

eggs

splash hot sauce
- Fry bacon in skillet over medium heat until crisp. Remove bacon from pan and chop roughly and set aside. Pour off extra fat, leaving about a tablespoon. Add onions and cook until soften. Add cauliflower and bacon and cook until cauliflower has brown bits around edges. Add salt and pepper to taste. Transfer hashed cauliflower to a bowl or plate. Add a little bacon fat to pan and fry two eggs. Splash your favorite hot sauce on hash and place eggs on top. Enjoy!
