Author Notes: If you’re looking for a substitute for pasta in your life, zucchini noodles are the answer. When prepared correctly, they are perfect for marinara sauce, noodle salads, or even soups. Ultimate Paleo Guide

Serves 4

  • 2 Zucchini (medium)
  • 1 teaspoon Kosher Salt
  • 1 tablespoon Olive Oil

  1. Cut the zucchinis into noodles using either a spiral slicer or julienne peeler. Lay them on a paper towel and sprinkle with the salt. Let stand for 10 minutes.
  2. Squeeze the liquid from the noodles. Heat a skillet over medium heat and add the drained noodles to the pan. Cook for a minute or two, until warmed. Serve with your desired accompaniments.
