Paleo Zucchini Noodles

If you’re looking for a substitute for pasta in your life, zucchini noodles are the answer. When prepared correctly, they are perfect for marinara sauce, noodle salads, or even soups. —Ultimate Paleo Guide

What You'll Need
Ingredients
  • 2 Zucchini (medium)
  • 1 teaspoon Kosher Salt
  • 1 tablespoon Olive Oil
Directions
  1. Cut the zucchinis into noodles using either a spiral slicer or julienne peeler. Lay them on a paper towel and sprinkle with the salt. Let stand for 10 minutes.
  2. Squeeze the liquid from the noodles. Heat a skillet over medium heat and add the drained noodles to the pan. Cook for a minute or two, until warmed. Serve with your desired accompaniments.
