Serves: 4

Grilled Halibut and Basil

  • 4 Halibut Steaks
  • 1 lemon sliced
  • 1 cup Red pepper Julienned
  • 1 cup Yellow Pepper Julienned
  • 1 Small white Onion
  • 8 grape tomatoes
  • 2-3 tablespoons Chopped Basil
  • 1 teaspoon Lemon Pepper
  • Olive Oil for Drizzle
  • salt and pepper
  1. using foil create a pan to cook fish on grill by rolling two layers of foil up on sides and place sliced lemons on foil.
  2. Lay Halibut on top of lemons and drizzle with olive oil, salt and pepper and lemon pepper.
  3. lay peppers, onion, tomatoes, and chopped basil on top of halibut and loosley cover with foil. Lay foil packet on grill in indirect heat and let it slowly cook until fish starts to flake.

Orzo Lemon and Basil Pasta

  • 1 Orzo Pasta
  • 1 Juice of Lemon
  • 2-3 tablespoons Chopped Basil
  • 1 teaspoon Olive Oil
  1. Cook Orzo according to package directions. When Orzo is cooked, add Lemon, Olive Oil and Basil mix.
  2. Place Orzo on each plate and top with halibut and vegetable mixture
