Grilled Garlic and Herb Bread

Some define the beginning of civilization when language was created. Others say the dawn of agriculture. But the beginning of culture as I understand it, began when the first loaf of bread was broken and shared. What better image of community can you ask for? It’s not just a vessel for when you’re dipping it in a sauce or making a sandwich. Let’s celebrate bread on it’s own merit. —Just Me and The Clams

Ingredients
  • 8 slices of thickly sliced bread (classic Italian works well)
  • 1 stick of butter
  • 6 cloves of garlic, minced
  • 2 tablespoons mixed herbs (I used a mix of basil, thyme, and oregano here)
  • Salt and Pepper
Directions
  1. Blend the butter, garlic, and herbs together until well incorporated. Smear about 1/2 tablespoon on each side of each slice, all the way to the edges.
  2. Place these on the grill, but not on direct heat. This works best if you have a raised grill shelf or grate. Grill only until it starts to char, about 4 minutes, then flip and grill another 3.
