I use to know some very sweet Italian people in Dallas Texas many years ago and this was one of the dishes I learned to make from Momma Katrina where I spent many Happy hours cooking and eating in her kitchen. —CathyRaney

Ingredients
  • 2 or 3 Heirloom Tomatoes
  • 1/2 cup Black Olives sliced
  • 1/2 cup almonds Slivers
Directions
  1. Carefully wash all ingredients and Chop the Romaine into small pieces. Chop the Cucumber into small cubes, and Chop the Heirloom Tomatoes into Cubes. Slice Mushrooms and tear the Sweet Basil and Parsley add the sliced Black Olives, toss ingredients gently adding Almonds and Feta Cheese and gently adding to taste either a Wine Vinaigrette dressing or a Raspberry Vinaigrette dressing...Chill and serve..best with crusty Italian Bread.
