Apple and Oatmeal Bread with Vanilla Bourbon Glaze

This slightly sweet bread with a hint of apples and bourbon is a must make for fall! —Ashley

What You'll Need
Ingredients
  • 2 cups All-purpose flour
  • 1 cup oatmeal
  • 1 pinch salt
  • 1 teaspoon cinnamon
  • 1/2 cup granulated sugar
  • 3/4 cup packed brown sugar
  • 1/2 cup vegetable oil
  • 2 eggs
  • 1/2 cup Greek yogurt
  • 1 cup applesauce
  • 1/2 teaspoon vanilla extract
  • 1/2 cup butter
  • 1/4 cup brown sugar
  • 1/4 cup milk
  • 1 teaspoon vanilla extract
  • 1 tablespoon bourbon
Directions
  1. Preheat the oven to 350. Butter or grease a loaf pan.
  2. Mix the dry ingredients together in a large bowl. In a small/medium bowl, mix together the wet ingredients.
  3. Add the wet ingredients to the dry, and mix until just combined.
  4. Pour the batter into the prepared loaf pan, and bake in the preheated oven for 40-45 minutes, until an inserted toothpick comes out clean.
  5. To make the glaze, in a small saucepan, melt the butter over medium heat. Add in the brown sugar and stir until sugar has dissolved. Watch the pan carefully, as butter and sugar can turn on you quickly and burn.
  6. Add the milk, and bring to a boil slowly, and boil for about 2 minutes.
  7. Remove from heat, and stir in the vanilla and bourbon. Pour over the apple cake. The glaze will firm up as it cools.

Has this person ever wrote a recipe before? Why aren’t the ingredients for the bread and glaze listed separately? Why aren’t we told how long to let the bread cool — or whether it is glazed in the pan or after it’s removed? The glaze never firmed. The cake doesn’t taste that great either. This recipe needs an overhaul. First time Food52 has let me down.
