Pajeon are savory Korean pancakes loaded with squash and fried so it is crispy on the outside and soft on the inside. —Miss Hangrypants
Ingredients

medium Mexican Squash

large jalapeño

2 cups
all purpose flour

1 pinch
salt

3 tablespoons
dried shrimp powder
Directions

Julienne baby Mexican squash into matchsticks and finely chop jalapeños

If you can't find dried shrimp powder, you can usually find them dried and whole that you can pulverize yourself. Otherwise substitute with 1 tbsp light soy sauce.

Preheat frying pan with 1 tbsp vegetable oil to medium high heat. Ladle batter and spread to make a thin (2-3 layers of squash) pancake to cover the bottom. Fry for 5 minutes or until nicely golden on each side.
