This is a devilishly hot sauce with great depth and versatility. It's very easy to make and it makes a lot -- you could halve the recipe if you don't need much. Be sure to remove any seeds from your chipotle peppers first. If you wanted a sweet version, consider just adding smoked paprika and no peppers. I served this ketchup with a grassfed steak, grilled using a dry rub. It would be a welcome variation from plain old ketchup for sweet potato fries and I think it will work very well with chicken -- among many other possibilities! – Sagegreen
