A modern version of the old hot toddy. The Teddy uses birch tea instead of regular tea for a woodsy twist. Birch tea, which is known for its restorative effects, gives it a light wintergreen flavor.
Recognizing the Centennial of the National Parks, it is named after Teddy Roosevelt ,who played a major role in building our National Parks System and developing a conservation ethic. —Rob

Ingredients

10-15 pieces
Fresh, small birch twigs

12 ounces
water
-
2 ounces
Calvados or other brandy
-
.5 teaspoons
maple syrup (ideally grade A amber)

1 dash
Lemon juice

1 piece
Lemon
Directions

Clean birch twigs under water then rough them up

Place twigs in the water and bring to a boil.

When the water boils reduce heat to medium-low and steep for about 10 minutes. The water will change color and turn to birch tea. Do not over boil as it will cause the tea to lose flavor and aromatics.

Strain the tea into a tea or coffee cup.

Add the calvados or other brandy.

Add the lemon juice.

Add the maple syrup stirring it to ensure it completely dissolves.

Place the lemon slice into the mug/glass and serve warm.
