Ingredients
  • 1 cup pecans, whole or pieces
  • 1/4 cup 100% pure maple syrup
  • 1 teaspoon pure vanilla extract
  • 1/2 teaspoon sea salt
Directions
  1. Preheat a non-stick pan over medium heat.
  2. Add the pecans, maple syrup, and vanilla to the pan.
  3. Stirring constantly, cook for 3-5 minutes or until the syrup has caramelized. There should be no liquid left in the pan.
  4. Scatter the pecans evenly onto a sheet of parchment paper. Working quickly and using a couple forks, spread the pecans so they don't clump together as they harden.
  5. These harden within about 30 minutes, but it's best to let them cool for a couple hours before storing them in an airtight container. When not kept in an airtight container, they can get a little sweaty. They can be kept at room temperature for several weeks.

This took about ten minutes total and I loved throwing it together. Added a little chili powder and ate/shared while the pecans were warm. I'll try it again with cardamom and maybe some orange zest? Anyway- this was a great late night snack...

Super easy and perfect for pre-holiday dinner nibbles. Definitely double or triple the recipe because these are addictive!

Delicious! I made 3 times the amount, and added a few shakes of cinnamon. Perfect to enjoy with Thanksgiving cocktails!
