arroz con huevos fritos

today while searching for what to do with left over rice in the takeout box. It is an adaption of Huevos Rancheras for breakfast. —bruce

  • Serves 4
Ingredients
  • 1/2 cup pepitas
  • 2 tablespoons olive oil
  • 1/2 cup salsa verde
  • 1 1/2 cups canned tomatillos
  • 1 cup enchilada sauce
  • 1/4 cup corn meal
  • 1/4 cup lime juice
  • 3 cups left-over rice(cooked)

Directions
  1. toast pepitas in a dry pan, about 1 minute
  2. add olive oil and saute
  3. add corn meal continue to saute
  4. add salsa, tomatillos, enchilada sauce simmer 15-20 minutes until reduced by 1/3
  5. add rice, mix well reduce heat to low fry a few minutes
  6. flip rice, open a space in the rice to fry an egg.
  7. serve hot with a dollop of sour crème.
