For a quick lunch I love making Street Tacos. I enjoy coming up with different flavor combinations and this one is one of my favorites! —BerryBaby

Ingredients
  • 2 Flour Street tortillas
  • 1 Boneless, skinless chicken breast
  • 1 cup Shredded red cabbage (I use the mandolin)
  • 3 Medjool dates
  • 1 tablespoon Soy sauce
  • 1 teaspoon Sesame oil
  • Salt/pepper
Directions
  1. Heat oven to 375.
  2. Salt/Pepper chicken breast, drizzle with oil olive.
  3. Cover chicken with foil and bake for 30 minutes.
  4. Remove foil and bake additional 15 minutes or until internal temperature is 165.
  5. Chopped dates and mix with the shredded red cabbage.
  6. Drizzle cabbage mixture with soy sauce and sesame oil, toss. Salt and pepper to taste.
  7. Slice chicken and place on tortilla, top with the cabbage slaw.
