This recipe sort of came to me in a dream, and then I couldn't rest until dream became reality. The sauce is a delicious mixture of sweet honey and blackberries combined with tangy citrus and smokey chipotle. Add that to wings and get it all gooey and sticky... amazing. I dipped in plain yogurt mixed with fresh orange juice, but you could dip in whatever your heart desires.... or don't dip at all. These wings are not your same ol' same ol'; they are tossed with a blackberry, honey, citrus combo to make a sweet and sticky sauce with as much of a hot kick as you desire. The final sprinkle of brown sugar and zest from an orange to top the wings off adds a great burst of flavor; and speaking of the orange, I added all its juice and pulp to my sauce which about doubled the amount this recipe calls for, no problem just a little extra citrus kick. My husband & I both recommend you try these wings, blackberry season or not, frozen berries should work just fine. Ingredients
  • 24 chicken wings
  • 2.5 cups blackberries
  • 1/2 cup honey
  • 1 tablespoon ketchup
  • 1/4 cup orange juice
  • 1.5 tablespoons chipotle tabasco (or more to your liking..and you can use hot sauce of your choice plus a sprinkle of chipotle powder)
  • 1 tablespoon brown sugar
  • 1 teaspoon balsamic vinegar
  • 1 pinch ground black pepper
  • 1/4 cup melted butter
  • zest from 1 orange
Directions
  1. Preheat oven to 400 degrees, and put wings in for 40-50 minutes (until cooked through).
  2. While wings are baking, make sauce: puree berries, honey, ketchup, orange juice, hot sauce, brown sugar, and balsamic until smooth. If you dislike the seeds, strain (I like to leave them in). Mix puree with melted butter. Set aside.
  3. After wings have cooked for 40-50 minutes, drain juices. Pour sauce over wings and coat evenly (you might have sauce leftover). Stick back in the 400 degree oven for 10 more minutes, turning often. About half way through, sprinkle a little more brown sugar on top, and mix in, sprinkle orange zest on top. For last few minutes of cooking, turn on broiler.
  4. Reserve remaining sauce for dipping, or for another use (like eating with a spoon or dipping tortilla chips into or basting on salmon.)
  5. Enjoy!

These are really good wings! I made them Saturday for the college football opening day games. The recipe really does make a lot of sauce. I was glad I read all the comments prior to making this recipe so I was prepared to use the leftover sauce. And I did - twice! On Labor Day I repurposed the sauce for ribs - I added some more ketchup, Worcestershire, cumin and salt and brown sugar - it was great. Before those additions I took out about 1/2 cup which I used last night for salmon. While I was preparing the crispy skin salmon I reduced the sauce down to a fairly thick syrup which I plated and then placed the salmon on top. All around a great sauce and one that I will be using again.

We love the wings and the sauce just as I expected I would; in fact, I am braising country ribs in the extra sauce for tonight's dinner...Thanks for sharing your great idea! :)

Yum, love this sauce and I need to try it on ribs too...ribs and wings what a great combo that would make.
