Speck and Provolone Wrap with Fig, Grape and Pear Relish

I was recently at an event that served a fig and grape relish. It was so refreshing on a hot late summer day that I wanted to try to recreate it at home and do my own twist on it. This wrap was born from that. —TheWimpyVegetarian

Ingredients
  • Fig, Grape and Pear Relish
  • 3 firm fresh figs, finely chopped
  • 10 green grapes, halved or quartered
  • 1/4 pear, peeled and seeded, and finely chopped
  • 1 tablespoon pear chutney (you can use pear jelly, apple jelly or apple chutney with equal success)
  • squeeze of lemon juice
  • pinch of salt
  • Speck and Provolone Wrap
  • 2 flour tortillas
  • 2 tablespoons herbed chevre, divided
  • 1 package of speck ham (8-10 slices)
  • several slices provolone cheese
  • arugula or baby greens
  • Fig, grape and pear relish
Directions
  1. Fig, Grape and Pear Relish
  2. Combine all ingredients in a small bowl. Let sit for 30 minutes to mingle flavors.
  1. Speck and Provolone Wrap
  2. Spread the chevre on each tortilla. Layer on the speck and provolone. Shmear on the relish and finish with arugula or baby greens.
  3. Wrap it up and wrap in foil.
  4. Pack the wrap for a loved one. Keep one for yourself.

I'm making this relish, using some of my green tomato and apple chutney, to use on post T-Day sandwiches . . . turkey + speck + this + some arugula sounds about right. Great recipe!! How far in advance do you think I can make it? Tuesday? Wednesday? I suppose I could make it on Friday, but I always like relishes to have a bit of time to allow the flavors to develop. Thanks!! ;o)

The relish has lasted several days for me without any problem at all. And I agree with letting the relishes having time to meld their flavors! This should be beautiful with turkey and speck sandwiches with your green tomato and apple chutney. Please let me know how it turns out! I'm just now sitting down to plan our Thanksgiving meal. We do it in Atlanta, but I do the majority of the cooking and Myles' family does all the shopping for me before I arrive :-)
