Simple Roasted Cauliflower

We had this at a dinner party and it was so good that everyone wanted more. Luckily there are few ingredients, so the hostess just popped more in the oven. She used fontina which was good but I like the parmesan more. —Karen_and_Charlie

What You'll Need
Ingredients
  • 1 head cauliflower
  • olive oil
  • salt
  • grated parmesan cheese
Directions
  1. Heat oven to 450 degrees.
  2. Clean and cut cauliflower into individual pieces, leaving a bit of steam on each.
  3. Spread cauliflower out on a baking sheet.
  4. Give each piece a sprinkling of olive oil and salt. The olive oil shouldn't coat each piece but be generous enough that it gives to each side.
  5. Put in oven for 8 minutes.
  6. Toss them around so the other side can get roasted and brown and beautiful.
  7. Bake for another 8 minutes or so.
  8. Remove from the oven and sprinkle with parmesan cheese.
  9. Slap everyone's hand as they try to get to them before they hit the table. They really will because these things will melt in your mouth like butter.

I made this last night and it was great. I used parmesan but look forward to trying other cheeses. The timing was perfect, and I did a lot of turning to get the pieces evenly golden. They lloked little dry when I took them out so I piled them together and placed the serving over them to "self-steam." After a few minutes I scooped them into the bowl and spirnkled with the cheese, salt and some cracked pepper. We ad some left over so I steamed them up tonight, still delicious! Thanks!

I love how pure and simple this recipe is, really showcasing cauliflower in its glory! I have loved pairing fontina with cauliflower and had feared that parmesan would be too strong. But your recipe looks pretty convincing. I look forward to trying it this way. Thanks.
