Roofeeo's Tostones (Fried Green Plantains)

Ingredients
  • 1 green plantain
  • 1/2 cup vegetable oil
  • 1 tostonera
Directions
  1. Heat oil to frying temperature.
  2. Peel plantain: cut off the top and bottom; cut into the outside curve edge of the plantain, going as deep as the green exterior but being careful not to cut into the meat of the fruit; glide knife down the edge in a fluid motion; lift bottom edge of the skin of the plantain, and continue to lift the skin off of the plantain.
  3. Cut plantain into 1.5” chunks.
  4. Fry the plantain chunks until golden.
  5. Remove chunks from oil and place on paper towel.
  6. Smash the plantain chunks using the tostonera.
  7. Fry the smashed plantain until golden.

Patacones! At least thats what my colombian Godmother calls them. Also she just puts the chunk in between two layers of grease proof paper, puts it in between 2 books and stands on it!

We call them Patacones in Panama as well. Your Godmother has an awesome technique for smashing multiple plantain chunks! Sometimes I folded a sheet of foil paper in half long ways and then fold that in half, place the bottom of the foil paper on a kitchen rag, place a lightly fried olantain chunk in between the foil and smash with a thick bottle with a flat bottom... this technique works really well too.
