Ingredients
  • 350 grams young jackfruit
  • 250 grams coconut milk
  • 1 pinch galangal
  • 3 pieces lime leave
  • 1 tablespoon sugar
  • 1.5 tablespoons salt
  • 6 cups water
  • 1 cooking oil
  • 6 red onion
  • 5 garlic
  • 1 turmeric
  • 1 kencur
  • 3 seedless red chili
  • 3 candlenuts
  • 1 teaspoon coriander
Directions
  1. Crush these first : 6 cloves of red onion, 5 cloves of garlic, 1 inch of turmeric, 1 inch of kencur (kaemferia galanga or zedoary), 3 seedless red chili, 3 candlenuts, 1 teaspoon of coriander
  2. Prepare all the ingredients and wash them cleanly. Boil the jackfruit until it is boiling and then put it in cold water to remove the sap in order not to be bitter.
  3. Fry the powdered ingredients, kamferia galanga, bay leaves and lime leaves until smelling nice. Then put them into the pan together with the young jackfruit, salt and sugar. Wait until it is boiling and then pour the coconut milk, stir it and taste it. Add a little sugar and salt if it is rather insipid.
  4. The young jackfruit curry is ready to serve and you can complete it with hot sauce of course. You may serve it with another dishes by your own choices.

This looks like a wonderful recipe! I found it while searching Food52 for a jackfruit recipe. Definitely want to try it as soon as I learn about some of the ingredients: galangal, kencur, and candlenuts! I will comment again after trying this dish!
