this is a twist on the classic blt...and a most delicious one, if we do say so ourselves. a healthier, more sophisticated pimento cheese (made from classic chevre!) melts all over bacon, tomato and crispy lettuce. um, yum. —bellechevre

Ingredients
  • 4 pieces good quality sandwich bread
  • 4 pieces bacon
  • 2 slices tomato
  • 4 tablespoons belle chevre pimento chevre
  • 1/2 cup arugula
  • 1/2 tablespoon butter
Directions
  1. Fry bacon until crispy.
  2. Spread pimento chevre evenly on two of the bread slices. Layer the arugula, tomato and bacon on the cheese. Place remaining bread on sandwiches.
  3. Heat butter over medium high and place sandwiches in pan. Fry until golden on each side.
